In a small bowl, mix the drained tuna, mayonnaise, diced onion, and mustard until well combined.
Butter one side of each bread slice.
Place one slice, butter-side down, in a skillet over medium heat.
Spread the tuna mixture onto the bread and top with the mozzarella cheese.
Place the second slice of bread on top, butter-side up.
