Preheat the oven to 180C/350F.
In a small bowl, toss the sliced apples with granulated sugar, cinnamon, lemon juice, and vanilla extract until evenly coated.
Spread the apple mixture in a small oven-safe dish suitable for one serving.
In another bowl, combine flour, rolled oats, brown sugar, salt, and cold butter. Rub the butter into the dry ingredients with your fingertips until the mixture forms coarse crumbs.
Sprinkle the crumble mixture evenly over the apples, covering them completely.
Bake for 30–35 minutes until the topping is golden brown and the apples are soft and bubbling at the edges.
Let the apple crumble cool for at least 5–10 minutes before serving.
