Spread a thin layer of butter on one side of each bread slice.
Place cheese between the unbuttered sides of the bread to form a sandwich, keeping buttered sides facing out.
Heat avocado oil in a nonstick skillet over medium heat.
Place the sandwich in the skillet and cook until the bottom is golden and the cheese begins to melt, about 3 minutes.
Flip the sandwich and cook until the second side is golden and the cheese is fully melted, about 2–3 minutes.
Remove from the pan, let rest 1 minute, then slice and serve warm.
