Prepare the chicken by trimming any excess fat and cutting it into even pieces or fillets so they cook at the same rate.
In a bowl, combine ayran, grated onion, garlic, lemon juice, salt, black pepper, paprika, and dried oregano, and mix into a smooth marinade.
Add the chicken pieces to the bowl and turn them in the ayran marinade until fully coated, then cover and refrigerate to marinate.
Let the chicken rest in the refrigerator in the ayran marinade until the meat is well flavored and slightly tenderized.
When ready to cook, heat a splash of olive oil in a pan over medium heat until hot.
Lift the chicken from the marinade, let excess drip off, then place it in the hot pan and cook on one side without moving until lightly browned.
Turn the chicken pieces and continue cooking until the other side is browned and the chicken is cooked through, then taste and adjust seasoning with more salt and black pepper if needed.
Remove the cooked ayran marinated chicken from the pan and let it rest briefly before serving.
