Gather and prepare all ingredients: mince the garlic and shred the cheese.
Preheat the oven to 200C/400F.
Pat the chicken breasts dry with paper towels and place them in a small baking dish.
Drizzle the chicken with olive oil, then season on both sides with salt, black pepper, garlic, and dried Italian herbs.
Bake the chicken for 18–22 minutes, or until cooked through and the juices run clear.
Remove the dish from the oven, sprinkle the cheese evenly over the chicken, and return to the oven until the cheese is melted and bubbly, about 3–5 minutes.
Let the chicken rest for 3 minutes before serving.
