Rinse the buckwheat groats under cold running water to remove any debris.
Preheat the oven to 200C/400F.
Place the chicken on a baking sheet, coat with a splash of oil, and season with salt and black pepper.
Bake the chicken until it is cooked through and reaches a safe internal temperature.
While the chicken is baking, add the buckwheat groats and water to a small pot.
Bring to a boil, then reduce heat and simmer until all water is absorbed and grains are tender.
Serve the baked chicken alongside the warm buckwheat.
