Prepare the potatoes by washing and cutting them into uniform wedges.
Preheat your oven to 200C/400F.
Toss the potato wedges with a splash of oil, salt, black pepper, and dried oregano in a large bowl.
Spread the potatoes on a baking sheet and roast until they begin to soften.
Coat the chicken breast with oil and season with salt and pepper.
Add the chicken to the baking sheet and roast until the chicken is cooked through and potatoes are golden.
