Wash the potatoes thoroughly and cut them into evenly sized wedges.
Preheat oven to 220C/425F and line a baking sheet with parchment paper.
Pat the potato wedges dry with a clean towel, then place them in a bowl.
Drizzle the wedges with avocado oil, then add salt, black pepper, garlic powder, and paprika; toss to coat evenly.
Spread the seasoned wedges in a single layer on the baking sheet, leaving space between pieces.
Bake for 20–25 minutes, turning the wedges halfway through, until golden brown and crisp on the edges and tender inside.
Let the wedges rest for 2–3 minutes before serving.
