Heat the olive oil and half the butter in a small non-stick skillet over medium-high heat.
Press the rice into the skillet to form a compact, flat disk and fry until the bottom is very crispy and golden.
Slide the crispy rice disk onto a plate and keep warm.
Melt the remaining butter in the same skillet and crack the egg into it.
Season with salt and black pepper, then sprinkle the cheese over the egg white.
Cook until the egg white is set and the cheese is melted, then slide the egg onto the crispy rice base.
