In a bowl, whisk mayonnaise, lemon juice, Dijon, grated garlic, Worcestershire, and anchovy paste until smooth.
If the dressing is too thick, whisk in water a little at a time until it coats a spoon.
Add chopped romaine to a large bowl. Drizzle on dressing and toss until evenly coated.
Add croutons and Parmesan, toss briefly, then finish with a little extra Parmesan on top.
