Rinse the sushi rice until the water runs mostly clear, then cook it with water until tender.
Fold rice vinegar, sugar, and salt into the warm rice, then let the rice cool until just warm.
Place nori shiny-side down, spread rice over it, add Shrimps, Avocado, Cucumber, Mayonnaise, and roll tightly with a sushi mat or clean towel.
Slice the roll into bite-size pieces and serve with soy sauce and wasabi if desired.
