Crack the eggs into a bowl, season with salt and black pepper, and whisk until the mixture is smooth and slightly frothy.
Heat a small nonstick pan over medium heat and add the butter, letting it melt and coat the pan.
Pour the beaten eggs into the pan, gently stirring for a short time, then let them set until the surface is mostly cooked but still slightly soft.
Sprinkle the grated cheese over one half of the omelette, fold the other half over the cheese, and cook briefly until the cheese is melted and the eggs are just set, then slide onto a plate and serve.
