Finely chop the onion and carrot. Heat the butter and olive oil in a saucepan, fry the onion and carrot for 3 to 5 minutes, then add the flour and cook for 2 more minutes.
Pour in the broth, add the broccoli and salt, and cook for about 5 minutes until the broccoli starts to soften.
Pour in the warm cream and cook for another 5 to 10 minutes over medium heat without bringing the soup to a strong boil. Stir in the grated cheese at the end and adjust the salt to taste.
