Prepare all ingredients by cutting the chicken into pieces and slicing the onion and mushrooms.
Heat the oil in a skillet over medium heat.
Add the sliced onion and cook, stirring, until softened and lightly golden.
Stir in the garlic and cook until fragrant.
Add the chicken pieces, season with salt and pepper, and cook until lightly browned on all sides.
Add the mushrooms and cook until they release their juices and start to brown.
Pour in the chicken broth, bring to a simmer, and cook until the chicken is cooked through and the liquid slightly reduces.
Taste and adjust seasoning with more salt and pepper if needed, then serve hot.
