Sear diced chicken in cooking oil with salt and black pepper for 5 minutes.
Add onion and bell pepper and cook for 4 minutes.
Stir in rice, tomatoes, and water.
Cover and simmer for 14 minutes until rice absorbs most liquid.
Top with mozzarella and bake at 190C / 374F for 15 minutes.
