Finely chop the tomatoes, onion, and cilantro. Add the lime juice and salt, mix well, and set aside as a fresh salsa.
Dice the onion, bell pepper, and chicken. Heat a little oil in a pan, cook the chicken with salt until done, then remove it. Cook the onion and bell pepper in the same pan and mix them with the chicken.
Lightly grease the pan, place the tortilla in it, and scatter cheese over one half. Add the chicken filling, top with more cheese, fold the tortilla over, and cook over medium heat on both sides until golden and the cheese is melted.
