Dice the chicken, onion, and tomatoes, and mince the garlic. Season the chicken with salt and black pepper.
Heat the olive oil in a deep skillet and cook the chicken for 4 minutes until lightly colored.
Add the onion and garlic and cook for 3 minutes, then stir in the rice and tomatoes for 1 minute.
Pour in the water, cover, and simmer gently for 18-20 minutes until the rice is tender and the liquid is absorbed.
