Cook rice with water and salt for 16 minutes, then cool slightly.
Dice chicken and sear in cooking oil for 6 minutes with salt and black pepper.
Simmer tomatoes, onion, and garlic for 10 minutes into a thick sauce.
Mix rice with egg, spinach, half the mozzarella, and a spoonful of tomato sauce.
Layer rice mixture, chicken, sauce, and remaining mozzarella in a small baking dish.
Bake at 190C / 374F for 22 minutes until set and bubbling.
