Toast the slice of rye bread until crisp and lightly browned, then set aside.
In a bowl, combine the drained chickpeas, olive oil, lemon juice, salt, pepper, and garlic (if using).
Mash the chickpea mixture with a fork until mostly smooth but still slightly chunky; adjust seasoning to taste.
Spread the chickpea mash evenly over the toasted rye bread and sprinkle with chopped parsley, if using, before serving.
