Grind the cookies into fine crumbs, mix with melted butter, press into the pan to form the base and edges, and bake briefly until set.
Mix the cream cheese with sugar, add the egg and sour cream, then stir in the melted chocolate just until smooth.
Pour the filling onto the crust and bake with a tray of hot water in the oven until set, lowering the temperature for the second stage.
