Boil potato in salted water for 18 minutes until tender, then mash very smooth.
Beat butter and sugar together, then add eggs one at a time.
Fold in mashed potato, flour, cocoa powder, baking powder, and a pinch of salt.
Spread in a lined pan and bake at 175C / 347F for 35 minutes until just set.
Cool for 15 minutes before cutting to keep the crumb dense and clean.
