Lightly grease the serving mold with a neutral oil if you plan to unmold the dessert.
Sprinkle the gelatin powder over cold water in a small bowl and let it sit to bloom.
In a saucepan, combine the heavy cream, milk, and sugar.
Heat the cream mixture over medium heat until the sugar dissolves, avoiding a full boil.
Remove from heat and stir in the bloomed gelatin, vanilla extract, and a tiny pinch of salt until smooth.
Pour the mixture into a ramekin or glass.
Refrigerate until the panna cotta is completely set and firm to the touch.
