Prepare and arrange the ingredients for the Cobb salad before dressing and serving.
Chop the romaine lettuce and place it in a wide shallow bowl or plate as the base of the salad.
Dice the cooked chicken breast, crumble the cooked bacon, chop the hard-boiled egg, dice the tomato and avocado, and slice the green onion.
Arrange the chicken, bacon, egg, tomato, avocado, blue cheese, and green onion in neat rows over the bed of lettuce.
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, a pinch of salt, and black pepper until emulsified.
Drizzle the dressing over the salad just before serving and season the top lightly with additional salt and black pepper to taste.
