Simmer Rice in Water and Chicken Broth with Salt for 10 minutes.
Add Chicken breasts, Mushrooms, Ginger, Garlic, and Black Pepper and simmer for 8 minutes.
Stir in Coconut Milk and simmer for 4 minutes. Finish with Spinach and Lime juice.
