Simmer jasmine rice with water and salt for 18 minutes.
Sear tofu cubes in cooking oil for 8 minutes until lightly browned.
Cook garlic, ginger, and red curry paste for 2 minutes.
Add coconut milk and broccoli, then simmer for 10 minutes.
Serve tofu curry over jasmine rice.
