Preheat the oven to 170C. Lightly grease a small baking dish or cake pan with the softened butter.
Crush the plain cookies into fine crumbs, mix with part of the butter, and press into the bottom of the pan to form a simple base.
In a bowl or blender, combine the drained cottage cheese, cream cheese, yogurt, and sugar until mostly smooth.
Add the egg, vanilla extract, lemon zest, and a small pinch of salt. Mix again just until evenly combined. Add a tiny pinch of black pepper only if you want a slight savory note.
Pour the filling over the prepared base and smooth the top.
Bake until the edges are set and the center still has a slight wobble, about 30 to 35 minutes.
Cool completely, then chill before slicing and serving.
