
Quick fried rice with eggs and soy sauce, best made with cold leftover rice.

Heat half the oil in a pan over medium-high heat. Add the beaten eggs and scramble until just set, then push to a plate.
Add the remaining oil to the pan. Add the rice and stir-fry, breaking up clumps, until hot and slightly toasted.

Return the eggs to the pan, pour in soy sauce, and toss until everything is evenly coated.
If the rice seems too dry, add a splash of water and stir for a few seconds to loosen, then serve.
