Separate lettuce leaves and dice the cucumber.
Season chickpeas with cumin, crushed coriander seeds, paprika, salt, and black pepper.
Cook chickpeas in cooking oil for 6 minutes until hot and lightly crisp.
Whisk tahini, lemon juice, garlic, and water into a thick drizzle.
Spoon chickpeas into lettuce cups and finish with cucumber and tahini drizzle.
