In a shallow bowl, whisk the egg with the milk, salt, ground cinnamon, and a tiny pinch of black pepper if using until smooth.
Place the bread slices in the bowl and let them soak in the egg mixture, turning occasionally so they absorb the liquid on both sides.
Heat a thin layer of neutral cooking oil in a nonstick pan over medium heat, then add the soaked bread slices and cook until golden on the first side.
Flip the bread slices and cook until the second side is golden and the center feels set, then transfer to a plate.
Serve the French toast warm and drizzle with maple syrup just before eating.
