Cut fresh tuna into chunks and mince garlic and basil.
Sear tuna in cooking oil for 2 minutes per side, then remove.
Add garlic, tomato paste, diced tomatoes, orzo, and 250 ml water; simmer for 10 minutes.
Fold tuna back in with basil, salt, and black pepper.
