Prepare the ingredients by dicing the chicken small and mincing the garlic.
Heat a splash of oil in a wok or large skillet over high heat.
Add the diced chicken to the pan, season with salt and black pepper, and cook until browned and cooked through.
Push the chicken to the side and sauté the minced garlic until fragrant.
Stir in the cooked rice and break up any clumps, mixing thoroughly with the chicken and garlic.
Drizzle with soy sauce and stir-fry until the rice is heated through and slightly crispy.
Top with chopped green onions before serving.
