Prepare the ingredients by slicing the chicken and onion before you start cooking.
Warm the cooked rice and keep it covered so it stays hot for serving.
Heat a splash of olive oil in a pan over medium heat, then add the sliced onion and cook until it softens.
Add the sliced chicken thigh to the pan, season lightly with salt and black pepper, and cook until the chicken is no longer pink on the outside.
Pour in the soy sauce, mirin, water, and sugar, stir to combine, and let the chicken simmer until the sauce slightly thickens and the chicken is cooked through.
Taste the sauce and adjust the seasoning with more salt or black pepper if needed.
Place the hot rice in a bowl, spoon the chicken and onions with some sauce over the top, and garnish with sliced green onion before serving.
