Cut the onion into a bloom shape while keeping the root intact and gently separate the petals.
Mix the flour and paprika in one bowl and whisk the egg with the milk in another bowl.
Dip the onion in the flour mixture, then the egg mixture, then the flour again, and fry at 180°C / 350°F for 8 minutes until golden.
Mix the mayonnaise and ketchup and serve the sauce with the hot onion.
