Mix flour with salt in a bowl.
Dissolve the yeast in water and pour it into the flour together with olive oil.
Knead the dough until soft and elastic.
Place the dough in an oiled bowl, cover and let it rise until increased in volume.
Transfer the dough to an oiled baking dish and gently stretch it to fill the pan.
Press dimples into the surface with your fingers and drizzle with olive oil.
Sprinkle grated parmesan cheese over the dough.
Bake the focaccia in the oven at 200C/390F until golden and crisp.
Let the focaccia cool slightly before cutting into pieces.
