Cook rice with coconut milk, water, and salt for 18 minutes.
Season chicken with lime juice, garlic, ginger, chili powder, paprika, cinnamon, salt, and black pepper.
Sear the chicken in cooking oil for 7 minutes.
Cover and cook for 12 minutes until the chicken is cooked through.
Serve the jerk-style chicken with coconut rice.
