35 gCarrot
2 gSesame seeds
1.25 cupsWater
2 gSugar
1 tspSoy Sauce
1.5 tspMirin
1 tspSesame Oil
Reserve 25 ml of the water. Lightly scrape the burdock skin, then cut the burdock and carrot into matchsticks about 2 mm thick. Soak the burdock in the remaining water for 5 minutes, then drain well.
Heat the sesame oil in a small frying pan over medium heat. Stir-fry the drained burdock for 3 minutes, then add the carrot and stir-fry for 2 minutes more.
Add the reserved water, soy sauce, mirin and sugar. Simmer uncovered for 5-7 minutes, stirring, until the vegetables are tender with a little bite and the liquid has reduced to a light glaze.
Sprinkle with the toasted sesame seeds and serve all of the vegetables as one small side portion.
