Finely chop the lamb and season it with salt and black pepper.
Cook onion, carrot, and garlic in cooking oil for 5 minutes.
Add the lamb and brown for 7 minutes.
Add tomato sauce and simmer the lamb bolognese for 18 minutes.
Boil noodles for 8 minutes, then toss with butter, lamb sauce, and parmesan.
