Brown lamb in cooking oil for 6 minutes.
Add onion, garlic, cumin, cinnamon, tomato paste, salt, and black pepper.
Pour in chicken broth, add dried apricots, and simmer for 35 minutes.
Pour boiling water over couscous, cover for 5 minutes, then fluff and serve with the lamb.
