Season the chicken with salt and pepper, then sear in olive oil in a hot skillet until browned on both sides.
Add the garlic to the skillet and cook, stirring, until fragrant.
Stir in lemon juice and water, scraping up browned bits, then reduce heat to a gentle simmer.
Return the chicken to the skillet and simmer until cooked through, turning once, and the sauce slightly reduces.
Turn off heat, stir in butter if using, spoon sauce over the chicken, and top with parsley.
