Brown the ground pork in cooking oil until no pink remains.
Add garlic, ginger, chili garlic sauce, and soy sauce; cook until fragrant.
Add cubed tofu and water, then simmer gently so the tofu absorbs the sauce.
Stir cornstarch with a little sauce, return it to the pan, and cook until thickened; finish with green onion, salt, and black pepper.
