Cook the quinoa in 160ml of water with a pinch of salt until the water is absorbed and grains are fluffy.
While quinoa cooks, heat a small splash of olive oil in a pan and quickly sauté the minced garlic and spinach until wilted.
In a small bowl, whisk together the lemon juice and remaining olive oil with black pepper to create the dressing.
Place the cooked quinoa in a bowl and top with the sautéed spinach, diced cucumbers, and crumbled feta.
Drizzle the lemon dressing over the bowl and toss lightly before serving.
