Finely chop all the onion and garlic. Heat all the oil in a small saucepan and cook the onion for 4 minutes until soft. Add all the garlic, ginger, curry powder, garam masala, cumin, turmeric and chilli powder. Stir over low heat for 1 minute without scorching.
Add all the potato, tomato and water. Cover and simmer gently for 15-18 minutes, stirring occasionally, until the potato is completely tender. Add all the drained cooked kidney beans and simmer uncovered for 5 minutes, stirring, until the curry is thick enough to sit in bread without a watery pool. Season with salt and pepper.
Meanwhile, stand the unsliced bread end upright with a cut surface on top. Hollow out a central cavity with a small spoon, keeping an intact base and walls at least 1 cm thick. Keep every piece of removed bread for dipping. Use a wide, deep loaf-end piece rather than thin sliced bread; do not toast it.
Put the bread container on one plate and spoon in the hot thick curry immediately before eating. A small mound may sit above the rim. If the cavity is smaller than the filling, serve the remaining curry against the bread on the same plate rather than weakening the walls. Add all the removed bread beside it. Eat the entire curry, bread container and removed bread as one portion; no rice, salad or other sides are included.
