Preheat oven to 200°C. Make the crust by cutting 100g cold butter into 150g flour with a pinch of salt until crumbly; add 2-3 tbsp ice water until dough forms. Chill for 15 mins.
Sauté onions in a pan with butter until soft. Whisk in 50g flour, then gradually add broth and cream, stirring until thickened.
Stir the cubed turkey and mixed vegetables into the gravy; pour the mixture into a deep baking dish.
Roll out the dough to fit the top of the dish. Place it over the filling, crimp the edges, and cut a few slits in the top for steam.
Bake until the crust is golden brown and the filling is bubbling.
