Heat a splash of oil in a large skillet and sear the chicken cubes until golden, then remove and set aside.
In the same pan, sear the shrimp until pink and opaque, then remove and set aside with the chicken.
Melt a knob of butter in the skillet and sauté the onions and tomatoes until softened.
Stir in the rice and coat with the tomato butter, then add water and season with salt and black pepper.
Cover and simmer until the rice is tender and liquid is absorbed.
Create small wells in the rice, crack the eggs into them, and arrange the chicken and shrimp on top.
Sprinkle with mozzarella cheese, cover, and cook until the eggs are set and the cheese is bubbly.
