In a pot, bring the chicken broth, onion, and sliced garlic to a boil.
Stir in the rice, reduce heat to low, cover, and simmer.
Once the rice is nearly tender and most liquid is absorbed, quickly layer the shrimp on top of the rice and replace the lid.
Steam for 3-5 minutes until the shrimp are pink and opaque.
Remove from heat, fluff with a fork while stirring in lemon juice and a knob of butter if desired.
