Mix soy sauce, brown sugar, half the ginger, garlic, sesame oil, and black pepper.
Coat the pork in the glaze and roast at 200C / 400F for 22 minutes.
Cook rice with water, the remaining ginger, and a small pinch of salt for 15 minutes.
Rest the pork for 5 minutes, then slice it.
Serve the glazed pork over the ginger rice.
