Preheat the oven to 210°C / 410°F.
Toss Fennel, Apple, Potato, Cooking oil, Thyme, Salt, and Black Pepper for 5 minutes.
Rub Pork with Mustard and place it over the vegetables.
Bake the assembled dish at 210°C / 410°F for 28 minutes until hot and cooked through.
