Cook jasmine rice with coconut milk, water, and salt for 15 minutes.
Whisk peanut butter, soy sauce, lime juice, brown sugar, and black pepper into a thick sauce.
Thread pork onto skewers or shape into strips, then brush with part of the sauce.
Sear pork in cooking oil for 8 minutes, turning and brushing with the remaining sauce.
