Toss potato with half the lemon juice, half the garlic, cooking oil, thyme, salt, and black pepper.
Roast potatoes at 210°C / 410°F for 30 minutes.
Season pork with remaining lemon juice, garlic, paprika, salt, and black pepper.
Sear pork in a hot pan for 8 minutes, turning until browned and cooked through.
