Season pork with salt and black pepper.
Brown pork with onion and garlic in cooking oil for 8 minutes.
Add tomato sauce and simmer for 35 minutes until pork is tender.
Whisk polenta into boiling water and simmer for 15 minutes, then stir in butter and parmesan.
Sauté zucchini for 6 minutes until just tender.
